Invasive Asian Carp Beware – A Louisiana Chef is Biting Back

Known for its long-jumping abilities and its appetite, the Asian Carp has captured headlines across the U.S. recently as populations begin to infiltrate the Great Lakes.  Resource agencies claim that the exotic Chinese import will disrupt the food chain of the lakes ecosystem, threatening among other things various native fish populations. 

But in the bayous outside Baton Rouge, Louisiana the wily and aggressive carp may have met its match.  Meet chef/entrepreneur Philippe Parola in this month’s Hemispheres Magazine who is combating the carp with his addition of “Silverfin Cakes” to French Quarter menus.  Hungry?  >READ MORE
